GEOGRAPHY AND EXTREME CLIMATE

This coffee originates from the Hambella woreda located in the expansive Guji Zone. This region enjoys an exceptional mountainous terroir, where farms sit at altitudes ranging between 2000 and 2200 meters above sea level. Historically, these extreme altitudes were considered too cold for coffee cultivation, but recent climate shifts have turned them into an ideal environment for specialty coffee production. This particularly cold climate significantly slows down cherry maturation, giving the plant more time to build and store carbohydrates and complex chemical bonds within the seeds.

GENETIC STRUCTURE

The beans of this crop are hand-picked from ancient "Mother Trees" grown in wild forests under the shade of endemic trees, and fall genetically under the Heirloom family. This closed natural microclimate, watered by mountain rivers (like the Wamena River), enriches the volcanic soil and provides complete natural nutrition to the plant.

PROCESSING AND CHEMICAL PROFILE

Processing for this crop relied on a meticulous natural method. Scientifically, very slow drying at low temperatures preserves heat-sensitive Volatile Organic Compounds (VOCs), such as Linalool and Limonene. Consequently, highly potent aromatic notes of jasmine and wild florals burst in the cup, highlighting a pure, bright acidity that perfectly mimics the taste of orange and lemongrass, providing a vibrant and radiant sensory experience.
